A previous article in our company's Staff Blog briefly introduced a favorite food in Japan called "Ramen" (ラーメン) -- spaghetti-like noodles served in a delicious broth with some meat and vegetable toppings.  The article is linked below.  Of interest, just as popular as Ramen is another noodle-type dish called: Udon (うどん).  White-colored Udon noodles are made from flour and are thicker than Ramen noodles.  Udon is eaten both hot and cold with an endless variety of recipes and variations; and it is served at many restaurants and specialized eateries.  Udon noodles can also be purchased at supermarkets and convenience stores, either ready-to-eat or frozen.  Japanese have been eating Udon for many centuries, and the noodle recipe is thought to originally have come from China in 700s.  The "classic" and simple style of Udon is called: "Kah-keh Udon" (かけうどん), in which the noodles are served in a hot "Dashi" (出し) broth.  Dashi is made from kombu kelp and dried bonito fish flakes, added with soy sauce, a small amount of mirin (sweet rice wine), and sugar.  Commonly used toppings include leek, "ten-kasu" (tempura flakes), soft-boiled egg, and ginger.  During the hot summer months, cold "Zaru Udon" is often eaten, where the noodles are boiled, cooled in cold water, and served on a bamboo basket on a tray (Zaru).  To eat them, the Udon noodles are dipped in a soy & vinegar-flavored sauce that is served separately.  Leek, grated daikon radish, ginger, wasabi, and other toppings are commonly used as garnish.  There is also a popular recipe where Udon noodles are served in a hot & spicy curry soup.  For those who wish to try Udon, a convenient option is to visit the food court in Yokosuka's "Coaska Bayside Stores" shopping mall (located right next to the U.S. navy Base) where a branch of the famous "Marugame Seimen" noodle restaurant is located.  Marugame is cafeteria/self-serve-style -- line-up, grab a tray, order your noodles, and then pick and choose your own toppings!  We hope you will be able to eat this popular comfort food while you live in Japan.
