Japanese food: Korokke

Delicious and satisfying staple meals, also called "comfort foods", are found in all countries around the world.  Some examples of comfort food in Japan are "Onigiri" (rice cakes) and "Don-buri" (rice bowls) -- see the links below for more information.  In this article, we will take a look at "Korokke", which are hand-sized, breaded & deep-fried patties made with different fillings.  Korokke's are basically Japan's version of France's "croquettes".  They were originally introduced in Japan during the late-19th century and quickly become very popular.  The most common type of Korokke is made from a mixture of mashed potatoes and ground meat, which is breaded with "panko" breadcrumbs and then deep-fat-fried -- so the outside crust is brown and crispy, while the potato/meat filling is hot, soft & juicy.  Potato korokke's are flat and oval-shaped, and sometimes ingredients like onions, pumpkin, or squash are added.  There is another variety of korokke which is filled with thickened cream sauce and seafood or meat, and its shape is more cylindrical.  There are also Korokke's which contain just ground beef or ham, and sometimes you can find white bread sandwiches where the filling is a korokke.  Ketchup, brown sauce, or Japanese-style Worcestershire sauce can be used for seasoning.  Japanese supermarkets will have a prepared foods section, where various types of korokke's are displayed for sale.  These tasty treats can also be purchased at most convenience stores.  They are not all that difficult to make, with simple ingredients, so as long as you have a fry pan and some cooking oil, korokke's can be produced in your own kitchen.  We hope you will get the chance to enjoy this popular Japanese comfort food.
