In a previous article (linked below) we introduced a cooking appliance which is found in most Japanese-style kitchens -- the gas stove. Generally, Japanese kitchens are not equipped with Western-style ovens, so meals are prepared using the gas stove, which has burners on top for placing frying pans or woks, and a pull-out drawer type of broiler, which is often used to grill fish. Taking a closer look at the fish broiler, it is a simple design with a removable grill on top of a grease drip pan, and it can be completely pulled-out from the gas stove for cleaning. With most fish broilers, the gas flames will be located above the grill, so the fish will need to be to be turned over during the cooking process. However, there are more expensive gas stoves which have broiler flames both above and below the grill. Not only fish, but steaks, pork chops, sausages, vegetables, and other foods can be cooked in the fish broiler. The results can be very delicious, as the outside of the food can be broiled to be crisp, while the inside remains juicy. When first using the broiler, it is important to check/keep an eye on how quickly the good is frying, and also make sure to turn on the exhaust fan located above the gas stove. You may also want to put some water or aluminum foil in the grease drip pan, which will make cleaning easier afterwards. Once you understand how your fish broiler works, i.e., adjusting gas levels, and how long it takes to get the best results, then you can try out a variety of grilling recipes.
