Another beloved and delicious comfort food in Japan is "Ton-katsu" (豚カツ) which is a deep-fried breaded port chop. 豚 "Ton" means pig/pork, and カツ "Katsu" is derived from the Japanese pronunciation of "cutlet" or "katsu-retto". The recipe for Ton-katsu is believed to have originated in a Tokyo restaurant over 120 years ago. The pork cutlet is breaded with "panko" Japanese-style breadcrumbs, which absorb less oil during frying resulting in a crisp coating, while the meat inside is soft and juicy. A sweet and tangy soy-based sauce is usually drizzled on top of the Ton-katsu, and it is served with a generous portion of fresh/raw, finely shredded cabbage. Another popular way to eat Ton-katsu is "Katsu-don" (カツ丼), in which the pork cutlet is fried together with eggs, onions, dashi (soup stock), sweetened soy sauce, and placed on a bed of rice in a "donburi" bowl. There are many restaurants in the Yokosuka area which specialize in Ton-katsu dishes, and it is a staple in "bento" box lunches which can be purchased at supermarkets or convenience stores.
